Nivik (Chickpeas and Spinach)

You’re frazzled with holiday shopping, Christmas programs, family gatherings, or stuck in traffic on the way home from work and forgot to take something out of the freezer. Dinner is looming on the horizon and your brain is too exhausted to think of one more thing to do. Instead of picking up take out, try this recipe instead. It will be on the table in less than 30 minutes, and is inexpensive and filling! It would also be a great beginner recipe to teach your children how to cook. It’s a one pot wonder!

Chicken in Coconut Milk (Ginataang Manok)

Recently, we had the privilege of having a Filipino pastor in our home. It was the first time he had been out of his country and I wanted to make something familiar to him. After looking up several recipes, I came upon this one. Not only were the ingredients readily available, but this dish was very easy to make.

White Chicken Enchiladas

Need a quick and impressive meal for the upcoming holidays? White Chicken Enchiladas are simple to put together, versatile, and smell so amazing while baking! Try some different variations of this basic recipe or try making them in your crock pot for an easy Sunday meal!

Granola Bars

My daughters have been making granola bars for their families and I happened to taste them while visiting recently. They were so good that I decided to give the recipe a try. I now make them, and always a double batch at a time!! They are so easy and make a nice healthy treat to pack in my husband’s lunch.

Coffee Cream Puffs

Want to make a fancy dessert, a yummy dessert and a yet an easy dessert? How about cream puffs? Growing up, I was always thrilled when my Mom made cream puffs, and she made them fairly often. They look so pretty and some people shy away from them because they think they are difficult to make, but in reality they are quite easy. They take only four basic ingredients, well five with the water!

Sunday Crockpot Potatoes

Recently I have had requests for quick Sunday meal ideas. Sunday Crock Pot Potatoes is a side dish that Gina Hall and her daughters, Nina and Selena have cooked up (excuse the pun). This is a super easy way to prepare delicious potatoes and have them ready to serve when you return from church.

English Toffee Bars

My sister in law gave me this recipe years ago. A very rich cookie, it is a special Christmas treat at our house. Made of four basic ingredients, which sound an odd combination, but don’t let that fool you, they are delicious. They are easy to make and not so easy to stop eating!

Peanut Butter Cup Brownies

“I made the recipe one evening after work, and it took about an hour to turn out a batch of 4 dozen brownie bites, which were gone within 24 hours! Since then, I’ve made at least 5 other batches, each time they were big hits”. After sharing a batch with co-workers and guests, at the hotel where Amanda works, she had a guest ask for the recipe! “She couldn’t believe how easy they were when I explained how to make them!”

Meet one of my favorite friends in the kitchen…. The stick blender! I’ve had my stick blender for several years and it is such a help in my kitchen. So easy to clean too! My poor stand blender has been relegated to the cabinet and is rarely pulled out to use anymore. From fruit smoothies, creamed soups, to pesto and an everyday item like mayonnaise.

Spinach & Strawberry Salad

Karen Beckman brought this really great variation of Spinach & Strawberry Salad to a ladies meeting a few years back. She shared the recipe with me then and I have loved making it since. It is really delicious and so eye appealing. The dressing is an especially palatable combination of ingredients. There are no set amounts for the lettuce, almonds, spinach,…you be the judge. So easy, so beautiful, so luscious!

Parmesan Twists

Here is a “twist” on serving bread or rolls with your meal. My daughter first made these many years ago. What a nice appetizer, accompaniment to soup, salad, or any meal. Wouldn’t they be lovely served with an Easter Ham dinner!
