English Toffee Bars

My sister in law gave me this recipe years ago. A very rich cookie, it is a special Christmas treat at our house. Made of four basic ingredients, which sound an odd combination, but don’t let that fool you, they are delicious. They are easy to make and not so easy to stop eating!

English Toffee Bars

4 ounces saltines (1 sleeve)

1 cup butter

1 cup packed light brown sugar

1/2 teaspoon vanilla

1 12 ounce pkg. semi sweet chocolate chips

Optional: chopped nuts

Preheat oven to 400 degrees. Grease or spray a 9×13 pan. Arrange crackers, salt side up.

In a medium saucepan, melt butter and brown sugar, bring to a boil. Cook at medium heat for 3 minutes, stirring constantly.

Remove from heat and stir in vanilla. Pour mixture over crackers and bake for 5 minutes.

Remove from oven and sprinkle chocolate chips even over top. Bake for a few minutes more to just melt the chips. When soft spread the chips with the back of a spoon. You may also pre melt the chocolate chips in a double boiler or microwave and then spread the melted chocolate on top.

If you wish you may sprinkle with chopped nuts of your choice. (Almonds, pecans, walnuts.)

Cool, and when set, break into pieces.

Try to eat just one!

*Hint..The cooked butter and sugar mixture is VERY HOT. Please be careful not to splash yourself and don’t lick the spoon!!

  2. My daughter and I just made these for some missionary friends of ours. For such simple ingredients, these taste wonderful! I already lost MaryLou’s challenge…I’ve eaten two! :o)
