Wacky Cake

As a busy mother, Becky Simmons sometimes needs a little baking help!  Not necessarily a store bought mix, but in this case, a quick and easy homemade cake.

The recipe is called “Wacky Cake.”  Becky said, “I received many of my mom’s old cookbooks.  One of my favorites is one which is falling apart and quite stained.  This recipe came from there. I like it because it is just as quick as a box mix, but has less bowls to clean up.  Well, see how you like it.  I hope you enjoy.”

This would also be an easy recipe for a young girl, who is just learning to bake, or that lone bachelor!

Wacky Cake

1 ½ c flour                                    1 tsp. baking soda

1c sugar                                        ½ tsp salt.

3 Tbsp. cocoa                                1 tsp. vinegar

1 tsp. vanilla                                  1 c water

5 Tbsp. melted Crisco (I use butter)

Preheat oven to 350 degrees.

Mix dry ingredients into ungreased 8 X 8 inch baking pan.

Make 3 holes with your fingers.  In one hole put vinegar, in other hole melted Crisco or butter, and in the third hole put vanilla.

Then pour the water over all and stir until smooth.

Bake in pan you mix in.  Bake at 350 degrees for 35 minutes.

To make it wackier, for the icing, put plain Hershey milk chocolate bars on top of the cake as soon as you take it out of the oven.  Cover with aluminum foil to keep the heat in, the chocolate will melt and can be spread.

This was a very quick and easy recipe and Becky was right, not much to wash up afterwards! Since I had no chocolate bars on hand, I substituted semi-sweet chocolate chips for the icing and they melted nicely and tasted great too!
