Sunday Crockpot Potatoes

By MaryLou Kolonyi

Recently I have had requests for quick Sunday meal ideas. Sunday Crock Pot Potatoes is a side dish that Gina Hall and her daughters, Nina and Selena have cooked up (excuse the pun). This is a super easy way to prepare delicious potatoes and have them ready to serve when you return from church.

The potatoes do not need to be peeled, just washed and sliced thin. Layer the potato slices with pats of butter, salt and pepper. Turn your crock pot to “high” and they will be finished cooking in about four hours. Of course you can prepare this dish anytime, but it is particularly nice to have ready for Sunday dinner.

You may wash, slice and put the potatoes in a bowl, covered with water overnight, to make things even quicker in the morning. Just remember to drain all of the water from the potatoes, then place them in the crock pot, layering as in the recipe.

Sunday Crock Pot Potatoes

5 lbs potatoes (washed and sliced, with skins on)

1 to 1 1/2 sticks butter

salt and pepper

Layer the potatoes with pats of butter and salt and pepper between each layer.

Cook on high while you are at church and come home to yummy potatoes!

The potatoes are moist and buttery and oh so good!

This recipe is great just as it is, but it is always fun to try options with any recipe, at different times….

To make this into “meat and potatoes”, you might layer the potatoes with sliced or chopped pieces of uncooked sausage, Country or Italian. If using sausage, I would cut the butter in half.

Ham may be another meat that you could layer with the potatoes. You may want to use the butter as called for with the ham.

Use your imagination if you would like to try adding other spices to your potatoes, such as parsley, paprika, onion powder, etc., but use them sparingly until you find your right preference.
