Mayonnaise

Meet one of my favorite friends in the kitchen…. The stick blender! I’ve had my stick blender for several years and it is such a help in my kitchen. So easy to clean too! My poor stand blender has been relegated to the cabinet and is rarely pulled out to use anymore. From fruit smoothies, creamed soups, to pesto and an everyday item like mayonnaise.

I’ll share my recipe for Mayonnaise, which can so easily be made at home. It’s one of those items we often run out of and we think we need to quick make a trip to the supermarket for. Not so! All of the ingredients are probably in your kitchen right now. Try this recipe for yummy, “fresh”,  and wholesome, mayonnaise!

Mayonnaise

2 egg yolks (room temp)

3/4 teaspoon salt

1/2 teaspoon powdered mustard

1/8 teaspoon sugar

pinch cayenne pepper

4-5 teaspoons lemon juice or white vinegar

1 & 1/2 cups olive or other salad oil (like Canola)

4 teaspoons hot water

Put yolks salt, mustard, sugar, cayenne pepper and three teaspoons of the lemon juice into the blender cup.

Buzz this mixture for 15 seconds on a lower blender speed.

Now “SLOWLY” drizzle a half cup of oil as you have your stick blender on high and are also moving it around in the cup. Continue to add the remainder of the oil, SLOWLY, alternating with the rest of the lemon juice and the hot water.

It is as simple as that!!! …and really delicious! Can’t tell the difference from store -bought! Of course you will want to refrigerate your mayonnaise right away.

This recipe reminds me of my favorite name brand mayo, so I like using it, but there are many variations that are also good. It can also be a big money-saver, if you didn’t stock up the last time your favorite mayo was on sale!

I have also made mayonnaise in a standard blender, so if that is your blender of choice this recipe will work for you too. A food processor would also work. Always remember to drizzle the oil into the mixture SLOWLY.
